Tasty Fried Rice and Chicken

Who doesn’t love delicious, homemade fried rice and chicken during Ramadan? It’s the quintessential iftar food and you’re going to absolutely love this recipe!

Below is a recipe to give you perfect, step-by-step instructions.

Fried Rice and Peppered Chicken.

Ingredients;

Rice

Chicken stock Seasoning cube Vegetable oil

Carrot

Spring onions

Sweet corn

Liver Prawns(optional) Green pea

Green beans

Curry

Thyme

Salt

Chicken Tomatoes Habanero peppers

Red and Green bell peppers

Scotch bonnet Onions Ginger.

Method;

- Wash the chicken and put in a pot, add in seasoning cubes, ginger, salt, onions,curry and thyme and leave to cook.

- Blend the peppers with onions coarsely and set aside.

- Fry the chicken lightly and set aside.

- Boil the liver with salt and set aside.

- Place a wok on heat, add little oil, grated ginger and onions and saute.

- Then add in the peppers, seasoning cube and salt.

- Then add in chicken and cover and leave to simmer for few minutes and remove from heat and set aside .

- Place a cooking pot on heat, add oil, the stock from the chicken, curry,thyme, seasoning cube and let it boil.

- Then, add in the washed rice and salt, cook on low heat.

- In a wok, saute all the veggies with the green bell peppers, liver and prawn and onions in oil.

- Add it into the rice and allow to simmer on very low heat.

- Remove from heat and serve with the peppered chicken.

Your fried rice and chicken is ready to eat.
